My career's inception was orchestrated by my grandmother. She arranged for me to visit an open day at Blackpool and Fylde Catering College, after which I secured a place. After my training I was steered towards an unforgettable tenure at Le Manoir Aux Quat'Saisons, following a successful trial shift that crystallised my aspirations. It was there, amidst the whirlwind of flavours and passion, that I truly found my calling.

Navigating the tempestuous kitchens of culinary titans like Raymond Blanc, Richard Neat, Gordon Ramsey, and Marco Pierre White was an unbelievable experience. These experiences, filled with the raw intensity of Michelin-starred battlegrounds, were frankly really exhilarating. The electric tension, the pulsating atmosphere, the unabashed passion, and the fiery tempers forged an environment where mediocrity found no refuge. Yet, amidst these remarkable chapters, the pinnacle of my career was being awarded a Michelin star at Gilpin Lodge. This accolade, a testament to relentless pursuit and sacrifice, is my biggest achievement. In quiet moments of reflection, as I ponder the road I've travelled, my enduring passion whispers the reassurance that there could have been no other path for me.

Dessert: WHAT IS THE SWEETEST STORY YOU CAN TELL?

The sweetest echo from my past invariably leads me back to my grandmother, whose generosity ignited the torch of my career. Her unwavering support and belief in me were encapsulated in the simplest, yet most profound of gestures, financing the first steps of my culinary journey. I fondly recall the battles of the dessert spoon over her remarkable rhubarb crumble, a recipe I daringly claim to rival today, albeit with a touch of jest. She, with her custard, and I, with my ice cream, would revel in the joy of shared moments. Her kindness and spirit still fill my memories with sweetness, a reminiscence of a soul so dearly missed.
