My 30-year career has seen me cooking as a Private Chef in a plush penthouse, as well as the intensity of Michelin, starred kitchens before establishing Harthill Cookery School in 2011. This means eager members of the public can come and share the secrets and stories of a professional kitchen! I’ve been lucky enough to collect a few awards as a Chef but becoming Britain’s Best Small Cookery School which I am most proud.
Festive cooking has changed for me now, rather than cooking thousands of meals I now cook with people on our courses. That could be calmly teaching folks how to bone out & stuff their celebratory turkey or spit roasting one over charcoal on our barbecue terrace in readiness for a Christmas day barbecue. Although, that may change next year as I hope to take on my now local pub to offer fantastic locally produced food and craft beers. It’s a challenge but we’ve great support locally and good people around us.
