Finnair at Food Sorcery – Japan

Finnair at Food Sorcery – Japan

WORDS: Ange Seddon

Venturing out on yet another evening of epic Manchester weather (at least this time I learned my lesson and had the right coat on) the wind made the huge towers whistle and the rain was sideways, I was determined to soldier on, as I was looking forward to my evening.

The lovely people of Finnair had invited me to Food Sorcery, a cookery school on Deansgate, Manchester. To celebrate the new flights from Manchester Airport’s revamped and upgraded T2 to Japan (via Helsinki) I was going to learn how to make the Japanese staples of gyoza and ramen.

Manchester Airport’s expansion and upgrades have meant that they can increase capacity and passenger experience with a bigger offering of long-haul destinations. This is where Finnair comes in. They offer a world class service, via Helsinki, to many destinations, and are the biggest European airline offering 28 flights weekly to 4 different Japanese destinations. This Nordic country has been voted the ‘World's Happiest Country’ on many occasions, so you can be guaranteed a delightful experience when using Helsinki as a link to Finnair’s extensive Asian network.

But back to the food. It has been said that one of the best ways to explore a country is through its cuisine, and that is what we got to experience. With the help of Food Sorcery, we were treated to expert demonstrations and great hands-on experience with some of the foods of Japan. We learned how to make the pretty pleats in the gyoza after filling with a delicious sweet potato and tofu filling. Then, how to cook them to perfection, crispy bottoms with steamed tops. These little parcels packed a huge amount of flavour and texture, and it was great fun making them too. We then went on to make our chicken ramen dish, using a range of Asian ingredients and spices to make a meal that was not only beautiful, but loaded with umami from the dashi and mushroom broth.

It is an impressive set up here, we worked in pairs with all the equipment and ingredients we needed and easy to follow, yet detailed tuition. And even if you got stuck, there were chefs on hand to help you out and get you back on track. I have been to various cookery schools before, and I would say these guys are right up there with the best. Added to that it was tremendous fun. I would highly recommend any of their courses, they have so many to choose from. But with our evening, thanks to Finnair, we got to experience a little bit of Japan in rainy Manchester. It certainly warmed me up before having to go back out and face the elements. So, thank you Manchester Airport, Finnair and Food Sorcery for giving us a wonderful experience, Japanese style.
