New Head Chef at Chez Nous Bistro

Chez Nous Bistro on Marsland Road in Sale is delighted to welcome new Head Chef, Louis Byrne, directly from 20 Stories, Manchester.

Louis brings with him a wealth of experience and a genuine passion for innovative English cooking and fresh, seasonal produce. Alongside General Manager, Paul Lehmann (who himself has an illustrious past, having headed up the front of house teams at the likes of The Goring, London and the Lime Tree, Didsbury), Louis plans to revitalise the menu at Chez Nous. โ€œIโ€™m going to bring a little theatre to the foodโ€ says Louis, โ€œwith sharing platters, twists on the classics and techniques usually reserved for fine dining restaurantsโ€.

With the focus on high quality produce, sourced where possible from the North of England, Louis will have a full complement of new menus, by the beginning of March. Regular guests can rest assured that favourites, such as the Chez Nous steaks and Sunday roasts will remain unchanged.

Paul Lehmann, comments, โ€œIn the short time that Louis has been here, heโ€™s breathed new life into the restaurant, bringing with him a myriad of great ideas and experience. Iโ€™m really looking forward to taking Chez Nous in a new direction with himโ€ฆ expect great things to comeโ€.

Louis 42, is in chef terms, relatively new to cooking - having begun 16 years ago, when his brother, Aidan Byrne (currently the Head Chef at Restaurant MCR - formerly Manchester House) asked him to help in the kitchen at Tom Aikens, Chelsea. โ€œMy brother just kept pecking my headโ€ laughs Louis, โ€œtrying to get me to join him. I was a bit lost at the time, jumping from job to job and living hand to mouth. In the kitchen I found my passion, something to graft for, and I havenโ€™t looked backโ€. 

With the backing of his ambitious and seasoned-chef brother, itโ€™s not surprising that Louis was able to fast track his career: โ€œI wonโ€™t deny that my brother got me a foot in the door, but itโ€™s my own hard work thatโ€™s got me to where I am todayโ€, says Louis. He joins Chez Nous, seeking to make a mark on his own restaurant, having recently headed the kitchens at 20 Stories, Manchester and The Church Green in Lymm.

With a stylish interior and an inner-city vibe, Chez Nous Bistro is a hidden gem, on Marsland Road, Sale - that has a word-of-mouth following of regular diners. The restaurant benefits from from being located just 5 minutes from Brooklands Metrolink and motorway links.
