General Manager Max Flude discusses the latest renovations and menu at DoubleTree by Hilton Manchester Airport

Max, it’s all change over at DoubleTree by Hilton Manchester Airport as you’ve recently completed some renovation work to the former Mason’s Restaurant. What was the motivation behind the changes?

It was time for a fresh new look and we wanted to enhance our product for our guests. Along with the new look comes a new name and concept, which we hope will create an unforgettable dining experience for all our guests. There are new hotels at Manchester Airport and we wanted to ensure that we are still the number one hotel for our guests, so it’s important to continue to develop and enhance our facilities and services.

Who did you work with on the new design and what was the brief?

We worked with Sarah Hastie, owner and Interior Designer of Hastie Studios. They specialise in mid-scale hotel refurbishments with previous experience working with Hilton and our wider portfolio. The brief was to bring our existing lobby lounge, bar and restaurant to life by enhancing the mood lighting, new colourful furniture, wall finishes and an elegant new bar. The layout of the spaces largely stayed the same, but with the injection of new fretwork screens and zones of seating, the area has a new lease of life, making it somewhere you really want to sit and relax - for work or leisure.

What kind of feedback have you received from guests and staff members?

We have received lots of great feedback, particularly from our regular guests who stay multiple nights at a time. The new menu has been really well received and they love the new feel.

What is the concept of the restaurant?

The name “Lavelle” is steeped in rich history, derived from the Gaelic “Ó Maolfhabhail,” which translates to “fond of movement and travel”. This unique name not only adds a touch of heritage but also symbolises the restaurant’s commitment to offering a distinctive and memorable dining experience with touches of Manchester’s rich history in the textile industry. Lavelle aims to be a beacon of culinary excellence, much like its name suggests, standing out in the bustling environment of an international airport.

The strategic location of Lavelle within the DoubleTree by Hilton Manchester Airport is no coincidence. Situated just a stone’s throw away from one of the UK’s busiest travel hubs, the restaurant is perfectly positioned to cater to a diverse clientele. Travellers from all corners of the globe pass through Manchester Airport, making it an ideal spot for a restaurant that offers a global menu. The proximity to major travel networks ensures that Lavelle can serve a wide range of guests, from business travellers seeking a quick yet sophisticated meal to families looking for a comforting dining experience before or after a flight.

Lavelle’s global menu is designed to meet the eclectic tastes of its international patrons. By offering a variety of dishes inspired by cuisines from around the world, the restaurant ensures that there is something for everyone. This diverse offering not only caters to the varied palates of the hotel’s guests but also reflects the multicultural essence of Manchester as a city. In doing so, Lavelle not only meets but exceeds the expectations of its demographic, providing a dining experience that is both inclusive and exceptional.

Our standout dishes range from the exotic - like the Sri Lankan Seabass Curry and Curry-Cured Salmon with cucumber and wasabi yogurt - to beloved local favourites such as Whipped Goat’s Cheese with marinated beetroot and candied walnuts. Of course, no menu would be complete without our already-iconic Maple-Glazed Duck Breast, served with crispy duck fat potatoes, cauliflower purée, and a bold green peppercorn sauce.

Here, food and travel go hand in hand, making every dish a destination in itself.
